Nana L’queur's Old Fashioned Strawberry Purée

Hello my darling bees. Now, if you are pushed for time and want a quick filling, then you have come to the right place. Here is an easy recipe for strawberry purée. This is made without added pectin. Its a vintage recipes and it makes about 2 pints.

What will I need?

  • 3 Pounds - Fresh Strawberries
  • 530g - Sugar
  • 1/3 Cup - Fresh Lemon Juice
  • Candy Thermometer

What do I do?

1. Wash your strawberries in cold water. Drain thoroughly, chop them, and then disregard the caps.
2. Combine your berries with the sugar in a large steel pan. Let them set for 30 minutes at room temperature.
3. Now with your medium sauce-pot. let your strawberries come to a boil, slowly stirring , and occasionally adding the lemon juice.
4. Cook your strawberries rapidly on medium heat until they mixture reaches the temperature of 22F around 30-40 minutes. (Skim off any foam from the surface).

Tips, Tricks & Tiaras

  • Once cooled, I prefer to leave covered in the fridge overnight to help thicken, however if you are pressed for time you may use immediately once cooled.
  • If you wish to add alcohol, you may add your choice of tipple in after your purée has cooled. Simple add 3-4 tablespoons, stirring in-between each.
