Today I have a little surprise for you special bees who might be a little more sensitive to certain foods than most... a Vegan and gluten-free, Cherry & Almond cake, flavored with Scotch Whisky. Thanks to Stacey Horler for the original recipe which inspired the cake this episode.
Ingredients• 1¾ cup / 150g ground almond • 1 cup / 200g coconut sugar • 2 tbsp baking powder • 1¾ cup / 300ml Soy Milk (or preferred dairy-free substitute) • 2 tbp almond extract • ½ cup coconut oil • 2 tsp cider vinegar • 200g dried cherries - Scotch Whisky (or preferred alternative) Frosting Ingredients
1 cup / 100g vegan butter (e.g. Earth Balance)
2 cups / 250g organic powdered sugar ½ cup vanilla coconut milk (or preferred dairy-free substitute)
(Piping tip #19 for the red frosting, tip #30 for the green frosting)
